Hello, friends! I made you a Raspberry Peach Mimosa! It’s almost Mother’s Day, and Mom deserves something extra special. Let’s take our mimosas to the next level by swapping out the orange juice for peach juice, and adding a splash of raspberry liqueur.
Do you have big plans for Mother’s Day? I hope that you get to spend quality time with the important women in your life. My mom will be in town, and I’m looking forward to relaxing and making memories with her and my little ones. My mom is my best friend, and an amazing example of what a mother should be. I’m tremendously grateful for her.
Now that I am a mother myself, Mother’s Day is extra special. My children have brought me immeasurable joy, and Mother’s Day is a time to celebrate them too. I feel privileged to have the opportunity to raise them.
I send big hugs to those of you whose mothers who are no longer with us. I’ll be remembering my sweet grandmothers this Mother’s Day. They were both kind, selfless, beautiful women.
Lastly, let’s not forget the women out there who are longing to become mothers. Infertility filled my road to motherhood with sadness and uncertainty, and I know that Mother’s Day can bring a feeling of emptiness when you are struggling to create your family. To the strong women who are yearning to have a child of their own – I hope that someday soon you will get to be the mother you’ve always wanted to be. It is worth the wait, I promise.

In a champagne flute, combine juice and champagne (I used ⅓ juice and ⅔ champagne). Top with a splash of raspberry liqueur, and garnish with raspberries and peaches.
Notes
I left out quantities for this recipe because the quantity of juice and wine should be to your preference. I would estimate that each 750 mL bottle of sparkling wine would require 1 generous cup of peach juice.
